Lions Mane Mock Crab Cakes

•Preheat oven to 350F.
•I started with a roughly 1lb cluster of lions mane.
•Shred the lions mane up and lay it out on a baking sheet.
•I did the next step 2 different ways, both worked. Either drizzle 1/2 cup of melted butter or olive oil over the shredded mushroom.
•Sprinkle some garlic. I did not measure how much garlic I used. I like garlic a lot tho 😁.
•Toss shredded mushrooms to make sure the butter or oil coats them.
•bake at 350 degree for about 20 mins. You want the edges to have some golden brown to them.
•In a bowl mix together; -1 tbsp of Greek yoghurt (mayo works as a substitute if you don’t have yoghurt). -1 egg. -salt/pepper to taste. I used about 1tsp of both. -3 stalks of cut up green onions. •In another bowl; -1/2 cup of bread crumbs -1/4 lime squeeze the juice out. -once lions mane is finished baking it will go into this bowl.
•heat up a pan of oil (medium heat)
•combined both bowls of ingredients and hand mix.
•make patties and place in hot oil (be careful of oil popping. It hurts).
•the mock crab cakes will cook for roughly 1 min. Per side. Pull them out onto a paper towel to drip some of the excess oil.



Lions Mane Burritos

1 Tbsp cumin
1 tsp coriander
1 dash cayenne
1 dash cinnamon
2 tortillas
1/2 cup grated favorite cheese (pepper jack!)
1 lb Lions Mane
2-3 chopped cloves of garlic
2 Tbsp chopped ginger
1/2 cup Cilantro
1/2 lime juiced
2 tsp olive oil
1 1/2 cups pinto beans

Tear Lions Mane into bite size pieces, heat skillet to medium heat and add oil, then throw in Lions Mane and toss to evenly coat and cook down stirring occasionally. Add oil to another skillet, add in beans and all spices and 1/2 the garlic, cover and cook on medium low heat. Once Lions Mane is browning add cilantro, lime juice, the rest of the garlic, and ginger, cook for a few minutes. Mix all together and add your favorite burrito toppings, enjoy! Pan Fried Oyster Mushrooms

1/4 cup spelt flour
garlic powder
nutritional yeast
italian seasoning
grapeseed oil

Pretty simple way to make a great snack. Just soak the mushrooms in a bit of tamari, coat in breading, and toss in a pan with some oil and cook to a nice brown. (from @plant_based_mars on IG)



Dehydrated Oyster Mushrooms

This is the easiest way to cook/ eat Oyster mushrooms- throw them into a dehydrator, heat until "cracker dry" as they say, make sure by snapping a few larger pieces, then toss into a food processor or blender and turn into a powder. Store in an air tight container (canning jars work great) and then use in soups and sauces at your pleasure- Oyster mushrooms have a wonderful nutty, rich aroma/ flavor this way, use your imagination and come up with a new dish!!
